Spaghetti Carbonara is what's cooking. Or rather what cooked.

Apologies abound as i didn't think to take pictures cuz I wasn't really sure how this would go. I adapted the recipe from weelicious. This is a great site if you are looking for recipes the whole family will love. Even picky eaters.

Speaking of which. I knew this recipe was a win when I was able to sneak it into Jackson's bowl (albiet wtihout the bacon) and he ATE it. Not a ton, but enough that I would consider it a meal. So total win for whoever first came up with this gem.

So, here's how to make this lovely meal.

  • 1 lb spaghetti (I used trader joe's organic)

  • 1/2 pound bacon

  • 1 onion

  • minced garlic

  • 2 eggs

  • parmesan cheese (about 3/4 cup)

  • reserve pasta water

  1. Cook the spaghetti (duh)

  2. While that's going, chop up the onions and mince the garlic.

  3. Chop bacon

  4. Add bacon to skillet and cook for about 5 minutes, then add onion & garlic.

  5. I cooked this while the pasta was finishing up.

  6. Drain pasta, but be sure to save about a cup of the water

  7. Whisk cheese and two eggs together in bowl and add to pasta

  8. Add bacon, onions & garlic

  9. Add reserve water

  10. Mix and ENJOY!

The original recipe called for turkey bacon (hence making it lighter) as well as cooking the bacon in olived oil. I used some delicious uncured bacon I got in my last Walden share, so I cooked that. If you do use regular bacon, no need for olive oil. And cook it up so it's almost crunchy, but not quite.

Seriously guys, try this. Like I said, I scooped out some pasta sans bacon for Jackson (aka world's pickiest eater) and he had it. Also, Mike took it to work for lunch. Both signs of a sure win!
