In my head I have a really cheesy picture of myself serving up a pie or something, and also the "heeeeyyy good looking, whatchya got cooking?" stuck in my head. Hopefully it's stuck in yours too. So in an effort to bring the sexy, i mean, blog back I am introducing the whatchya got cooking segmant. Wahoo!!
This weekend we had some friends over, and while I hadn't made this snack in a while, it is always a favorite. May I present, BUFFALO CHICKEN RANGOON!!!

These take a little bit of time to prep, but are so worth it. You will eat them up so fast you'll forget to take pictures of the finished product for your blog post. oops.
Ingredients:
Chicken Breast (how many depends on how much you need, I cooked two and have a ton leftover)
Hot Sauce
Cheddar Cheese
Cream Cheese
Blue Cheese or Ranch Dressing for dipping
Wonton or Dumpling Wrappers (I normally use wonton but tried the dumpling this time, highly recommend)
Oil or shortening (your choice, just not olive)
First you want to boil your chicken breast so it's nice and cooked and easy to shred.

While shredding by hand is fun and all (said no one ever) I like to throw those babies in my ninja. I toss some chunks in with some hot sauce and viola! Shredded chicken.

Put the chicken aside in a bowl and feel free to add more hot sauce if you'd like.

Now the fun part.
Heat up the oil. While that's happening, you'll want to assemble the rangoon.
Set out your wonton or dumpling wrappers on the counter or cutting board. It's easiest to do this like an assembly line, so get all your other ingredients out and ready.

On each wonton add chicken, cheese & cream cheese. Try not to go overboard or it will be hard to seal the wonton and then you'll throw it in the oil and it will leave and everyone will cry.
Once you have them all filled up, you wet one side of the wrapper with water, fold the other side over and you are good to go.

***at this point, I was too busy cooking and stuffing my face to take pictures. But let's all just take a moment to enjoy the fact that I actually rememberd to take pictures at all!!
I usually get one big batch together and then while they are frying put together another one.
Fry until golden brown then set on a papertowel to cool off.
Once you have them all cooked, serve with either blue cheese or ranch dressing.

Oh, you can also make crab rangoon too. Instead of all the buffalo stuff just get some crab meat. Soften the cream cheese in the micrwave then combine it with the crab meat and use that as the filling :)
